Portlandia Daycation

Here in the Northwest it's Spring Break. We don't have plans to go anywhere, so I've planned up some fun things to do in the city.

To be tourists in our own town.

A little rainbow love



Last week the kids and I made rainbow cupcakes.
























Just a white cake mix, prepared as directed on the box and divided into six bowls with added food coloring.


Then layer the colors in the cupcake liners...easy peasy.


It's a happy mess and you can't NOT be happy eating one. They are just too fun!




Top with whipped cream or my favorite cream cheese frosting:

2 (8 oz) blocks of cream cheese, softened
1 c. butter (2 sticks), softened
1 pound confectioners' sugar
1 tsp. vanilla extract

In a mixing bowl fitted with a paddle attachment, mix cream cheese and butter until well blended. 
Add confectioners' sugar and vanilla and mix until combined.
Pipe or spread on cupcakes/cake.
Refrigerate or freeze any remaining frosting.

I've also done this in a cake form, instead of cupcakes. Both are fun and happy.

InstaFriday

It's been a while since I've done an InstaFriday so to ring in the first week of March, here it is! A few of these are photos from my phone, that didn't make it to Instagram.

Last Friday, our community had a Daddy-Daughter dance. Sweet Pea had been looking forward to it ALL week! She got to have her daddy all to herself.


While they were off dining and dancing, The Boy, Sweet Baby Girl and I went to a local art studio


The next night, I went back to the Art Studio for a Wine & Paint class with some girlfriends. Here was our project...



It was a really fun night!

Have you heard of Training Children in Grace & Truth? I recently liked them on Facebook and the other page suggestions they gave me were interesting. 


2pac? Really? Not sure what he has to do with raising children, but thank you for the recommendation, Facebook.

Speaking of children, this little one has been busy in her kitchen



It's hard to believe she's going to be 3 in a month! Where did my baby go?

She's been asking to make cake for a while and I finally gave in. We made rainbow cupcakes, because you can't NOT be happy while eating one.




AND this week, at our church rummage sale, I scored in the toy department!


I had one of these cash registers when I was a kid and my parents still have it. It is the first thing the kids pull out when we are there. This one is in great condition and still even has coins with it! For $4, I'll take it!

Mint Chocolate Cookie Bark

March is here and my Pinterest feed has been inundated with minty-chocolatey recipes. The mint chocolate combination is one of my favorite pairs...it's right up there with chocolate and peanut butter.

So, today I'm adding to the recipe box and sharing an awesomely good, NO BAKE candy over at 30 Days.


This has the perfect combination of sweet, salty, chocolatey and minty! It'll be a perfect treat for Saint Patrick's Day. AND you can switch it up for different holidays and occasions by changing out the M&M's and Oreo flavors.
